Bok Choy Salad

    This Asian vegetable was introduced to me by Linda, my wonderful friend that always has very special recipes.
    You can find Bok-Choy not only in Asian’s Supermarket, but in all of them now. I bought them at Jewe’l
    Try. within minutes the ball will be empty.. Light, refreshing and tasty..

    Linda’S advice:
    Be generous with the peanut butter,
    Don't worry about exact measurements,
    Make the dressing in a jar or container with a lid so you can shake it before putting it on the salad,
    Taste the dressing - just to be sure …..

     Dressing
    3 Tbsp                Balsamic vinegar
    3 Tbsp                Soy sauce
    2 Tbsp                 Honey
    2 tsp                    Peanut butter
     
    Topping
    1/2                         cup dry roasted peanuts
    1 (2.8-oz) pkg      ramen noodles, crushed (- Chicken Flavor )
    5 cups                   Bok Choy, cut to bite size
    2                            green onions, sliced
    1                            red pepper, thinly sliced
    1/2 cup                 cherry tomatoes
     
     
     
    In a small bowl, whisk together vinegar, soy sauce, honey and peanut butter until well combined.
     Set aside
    In a medium sized non-stick skillet, saute Peanuts and noodles until golden.  remove from heat           
    Put the salad ingredients in a large shallow bowl.
     Right before servicing, sprinkle the noodles and nuts over the salad. Drizzle with dressing
